  1. Mix the chestnut puree and 150 g of chestnut cream. Stir in the eggs one after the other until you get a smooth cream. First stir in the potato starch, then the oil. Whisk the egg whites stiffly with the whisk on the hand mixer, gradually pouring in the sugar and salt. Lift the egg whites under the chestnut mixture. Spread the mixture smoothly on a baking sheet lined with baking paper to form a rectangle (22 x 36 cm).
